Italian Chicken Pasta Salad

 

This is a hearty but light salad that will give you plenty of energy

 

Vinaigrette (0g of protein, 2g of carbohydrate, 14g of fat):

  • 1 tsp minced fresh rosemary
  • 1 tsp minced garlic
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • ½ tbsp red wine vinegar
  • 1 tbsp 3/6/9 oil or olive oil
  • 1 anchovy fillet minced (I know, but trust me you wont know its there)
  • salt and pepper to taste.

In a bowl combine:

  • 1 cup cooked whole wheat pasta
  • 3 pieces of canned artichoke 1/4s, drained
  • 2.5oz cooked chicken
  • 1 tbsp sun dried tomato chopped
  • 1 tsp fresh chopped Italian parsley

Pour in ¾ of vinaigrette, toss, put a couple of thin parmesan cheese slices on top and serve.
