Scrambled Eggs Santa Fe

 

This is a quick, easy and tasty way to start the day.

 

In a bowl combine:

  • 2 whole eggs
  • 1 tbsp of your favorite salsa

To a hot non stick pan add:

  • 2oz cooked and chopped chicken
  • 1 tbsp chopped green pepper
  • 1 tbsp chopped red pepper
  • 2 tbsp chopped onion

Spray pan with cooking spray and add ingredients, sprinkle with Tex Mex seasoning.

 

When peppers on onion start to soften pour in egg mixture and slowly stir until eggs are cooked. Pour contents of pan onto plate and sprinkle with ½ ounce shredded 18% MF cheddar and add two slices of whole grain toast.
