You can replace the rice in this meal with a Greek style pita for a more portable meal. You can also use lean pork tenderloin with all visible fat removed instead of the chicken, this change would only add an extra gram of fat.
Combine in bowl:
- 3oz cooked chicken, bite sized pieces
- 1 tsp olive oil
- 1 tsp dried rosemary
- 1 tsp dried oregano
- 1 tsp chopped garlic.
Place chicken in hot non stick pan and quickly sear all sides.
Reheat ¾ cup cooked brown rice (I cook my rice in chicken stock and a little chopped onion) and place on plate. Beside the rice place 1 sliced plum tomato, three ¼ inch thick slices of cucumber and a few slices of onion. Put chicken over rice and “salad” and drizzle with 1 tsp of 3/6/9 oil and 1 tsp lemon juice. Top off chicken with 2 tbsp tzatziki sauce and serve.
